Peanut Butter Chocolate Trifle

This recipe is a simple adaption of a Taste of Home recipe 'Peanut Butter Chocolate Dessert'.  I simply embellish it (as if it needs it), tweak a few directions and ingredients, and present it in a trifle bowl.  Trifle bowls make everything look beautiful.


12-16 servings  Prep time 20 min + chilling (4+ hours when in a trifle bowl)

Ingredients
1 package chocolate cream-filled chocolate sandwich cookies (Oreos - generic tastes fine) chopped, divided
1 package (8 oz.) cream cheese softened
1/2 cup of peanut butter
1 1/2 cups of confectioners' sugar (aka powdered sugar), divided
1 carton (16 oz) frozen whipped topping (Cool Whip), thawed, divided
25 miniature peanut butter cups chopped
1 cup cold milk
1 package (3.9 oz) instant chocolate fudge pudding mix



Directions
Chop 20 cookies and place them in the bottom of the trifle bowl.  Chop 10+ more cookies and set aside.



In a large mixing bowl, beat the cream cheese, peanut butter and 1 cup of confectioners' sugar until smooth.  Fold in half of the whipped topping.  Spread the mixture over the cookies in the trifle bowl.




Sprinkle with most of the peanut butter cups, saving a couple handfuls to sprinkle over the top.

*Trifle bowl trick - to keep the layers looking nice, carefully spoon gooey layers (like pudding), into the bowl closer to the center.  Using a spoon, carefully press the pudding layer onto the glass in a 1 inch layer, working your way all the way around the bowl.  This forms a 'seal' so that the next layer doesn't 'bleed' down.  Apply the next layer in the same manner to keep all the layers consistent.





In another large bowl, beat the milk, pudding mix and remaining confectioners' sugar on low speed for 2 minutes.  Let stand for 2 minutes or until soft-set.  Fold in almost all the remaining whipped topping, setting aside a few tablespoons of whipped topping.  Spread the chocolate pudding over the peanut butter cups in the trifle bowl.


Layer most of the remaining chocolate cookies (minus a handful) on top of the chocolate pudding.  Spread the remaining whipped topping over the top and sprinkle with handful of cookie crumbs and remaining chopped peanut butter cups.




Chill for 4 + hours then enjoy!
